Grinder Buns… Like Mancino’s is a delightful recipe that brings a slice of comfort food right to your kitchen. The fluffy buns are perfect for hoagies or as a side to your favorite meal, making them a versatile addition to any dining experience.
When it comes to substitutions, you can use shortening instead of lard if you prefer, but keep in mind that lard can add a rich flavor. If you have a gluten sensitivity, consider using a gluten-free bread flour blend, though the texture may vary. Always ensure your yeast is fresh for the best rise, and be mindful of any allergies to the ingredients used, especially with the cornmeal and lard.

Grinder Buns… Like Mancino’s Abm Recipe
Ingredients
- 1 cup warm water
- 1/4 ounce active dry yeast (quick rise)
- 2 tablespoons lard or 2 tablespoons shortening, softened
- 2 tablespoons sugar
- 1 teaspoon salt
- 2 1/2 cups bread flour
- 3 tablespoons water
- 1 tablespoon cornstarch
- 1 tablespoon cornmeal
- olive oil flavored cooking spray
Instructions
- Put 1 cup warm water, 2 tablespoons lard (or shortening), 2 tablespoons sugar, 1 teaspoon salt, 2 1/2 cups bread flour, and 1/4 ounce active dry yeast into the bread machine in the order your machine calls for.
- Set the machine to the dough setting and let it run through its cycle.
- Spray a baking sheet with olive oil cooking spray, then sprinkle very lightly with cornmeal.
- Divide the dough into 4 equal parts. Roll each part into a rope about 12 inches long, then flatten to about 3-4 inches wide, roughly squaring off the ends with your fingers to create a flat rectangle.
- Place the shaped dough onto the prepared pan.
- Spray a piece of plastic wrap with olive oil cooking spray and cover the dough, spray side down. Let the dough rise until it has doubled in size.
- Preheat the oven to 375 degrees F.
- Remove the plastic wrap from the dough. Mix together 3 tablespoons cold water and 1 tablespoon cornstarch, then brush the mixture over the rolls. Discard any remaining cornstarch mixture.
- Bake the buns until they are golden brown, about 20 minutes.
- Let the buns cool completely before attempting to slice them in half for hoagies. Place the bun flat on the counter, hold it down with your hand, and slice through it with a long serrated bread knife.
- Fill the buns with your favorite fillings and enjoy.
