- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup firmly packed brown sugar
- 1/4 cup shortening
- 1/2 cup butter or 1/2 cup margarine
- 1 egg
- 3/4 cup oatmeal
- 1 cup canned solid-pack pumpkin
- 1/2 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 200 degrees.
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, 1/2 teaspoon of baking soda, and 1/2 cup of firmly packed brown sugar.
- Gently cut in 1/4 cup of shortening and 1/2 cup of butter until the mixture resembles coarse crumbs, then blend in 1 egg.
- Beat the dough mixture until it’s evenly combined, and lastly, fold in 3/4 cup of oatmeal.
- Roll out the dough to about ¼ inch thick between 2 pieces of plastic wrap.
- Using a 2 ½ inch round cutter, cut the dough into circles and place them on an ungreased cookie sheet, about 1 inch apart.
- Prepare the filling by simply mixing the filling ingredients together.
- Put a teaspoonful of filling at the center of each circle and cover with the remaining dough circles.
- Seal the edges by pressing down with your fingers or using a fork to create a nice seal.
- Bake for 10-15 minutes until lightly golden.
