Healthy Oatmeal Chocolate Chip Cookies offer a guilt-free treat that satisfies sweet cravings while keeping nutrition in mind. With wholesome ingredients like oats, dates, and dark chocolate, the cookies are a delightful way to enjoy a classic favorite without compromising on health.

For those with allergies, substitutions can be made: try almond flour in place of spelt flour for a gluten-free option or coconut oil instead of canola oil for a richer flavor. If you’re out of walnuts, chopped pecans can step in nicely. Always ensure that the chocolate chips are dairy-free if needed, and consider using maple syrup instead of cane sugar for a natural sweetness.

Healthy Oatmeal Chocolate Chip Cookies Recipe
Ingredients
- 6 pitted dates
- 1 tablespoon ground flax seeds
- 3 tablespoons water
- 1/4 cup walnuts
- 2/3 cup rolled oats, divided
- 1 tablespoon canola oil
- 1/4 cup unbleached cane sugar
- 1 pinch sea salt
- 1 teaspoon vanilla
- 2 tablespoons shredded coconut (unsweetened)
- 1/2 cup spelt flour
- 1 teaspoon baking soda
- 1/3 cup dark chocolate chips
Instructions
- Preheat the oven to 325º F and line 2 baking sheets with parchment paper.
- Soak 6 pitted dates in hot water for 10 minutes to soften them up a bit.
- In a separate bowl, stir together 1 tablespoon of ground flax seeds and 3 tablespoons of water, then set it aside to thicken.
- In the bowl of a food processor, combine the soaked dates and 1/4 cup of walnuts, pulsing until the mixture resembles coarse sand.
- Add the flax mixture, 1/3 cup of rolled oats, 1 tablespoon of canola oil, 1/4 cup of unbleached cane sugar, a pinch of sea salt, and 1 teaspoon of vanilla to the processor. Pulse for about 15-20 seconds to mix everything well.
- Transfer the mixture to a mixing bowl, and stir in 2 tablespoons of shredded coconut, 1/2 cup of spelt flour, and 1 teaspoon of baking soda, followed by the remaining 1/3 cup of rolled oats until everything is well combined.
- Gently fold in 1/3 cup of dark chocolate chips until evenly distributed.
- Drop rounded teaspoonfuls of dough onto the parchment-lined baking sheets, flattening them slightly with the back of a spoon or your hands, since they won’t spread much during baking.
- Bake for 8-10 minutes, or until the cookies start to turn golden. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
