Individual Brownie Alaskas are a whimsical dessert that combines rich brownies with creamy ice cream and fluffy meringue. The delightful treat is perfect for impressing guests or enjoying a sweet moment at home. With just a few ingredients, you’ll be on your way to creating a show-stopping dessert.

When it comes to ice cream, feel free to switch it up with your favorite flavors, like vanilla or chocolate for a classic twist. If you’re avoiding eggs, consider using aquafaba as a substitute for the egg white to achieve that lovely meringue texture. Always use fresh ingredients for the best results, as quality really shows in the final product.

Individual Brownie Alaskas Recipe
Ingredients
- 2 brownies (3×3)
- 1/4 pint coffee ice cream or 1/4 pint peppermint ice cream
- 1 egg white
- 2 tablespoons sugar
Instructions
- Place the brownies on an ungreased baking sheet.
- Top each brownie with a generous scoop or slice of your chosen ice cream, then place them in the freezer to ensure the ice cream is very hard before covering with meringue.
- Preheat your oven to 450ºF while the brownies chill.
- In a mixing bowl, beat the egg white until it becomes foamy. Gradually add the sugar, continuing to beat until the mixture is stiff and glossy—don’t skimp on the beating here.
- Quickly spread the meringue over the ice cream and sides of the brownies, making sure to seal the meringue to the baking sheet for that perfect finish.
- Bake in the preheated oven until the meringue is light brown, which should take about 3 minutes.
- After baking, if you’re not serving immediately, place the Brownie Alaskas back in the freezer for up to 24 hours.
