For those looking to make adjustments, consider a graham cracker crust using 2 cups crushed graham crackers, 1/2 cup melted butter, and 1/3 cup sugar or Splenda. Cottage cheese can replace cream cheese; just blend it until smooth to avoid any graininess. Sugar-free gelatin is also a great alternative, and don’t shy away from experimenting with different gelatin flavors to suit your taste buds.

Ingredients

  • 1 cup unsalted butter
  • 1/2 cup dark brown sugar, packed
  • 2 cups flour
  • 1 cup walnuts, chopped
  • 3 ounces lemon gelatin
  • 1 cup hot water
  • 1/2 cup sugar
  • 8 ounces cream cheese, softened
  • 1 pint whipping cream
  • 6 ounces strawberry gelatin
  • 3 ounces strawberry gelatin
  • 4 1/2 cups hot water
  • 1 (7 g) envelope unflavored gelatin (approximately 2.5 teaspoons)

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a large bowl, cream together 1 cup unsalted butter and 1/2 cup dark brown sugar until light and fluffy.
  3. Add 2 cups flour and 1 cup chopped walnuts and stir until a crumbly dough forms.
  4. Press the dough into the bottom of a 9×13 inch pan. Bake for 10 minutes or until the crust turns a lovely golden brown. Allow to cool completely.
  5. Dissolve 3 ounces of lemon gelatin in 1 cup of hot water. Let it cool down.
  6. While waiting, whip the 1 pint of whipping cream until peaks form. Alternatively, you can use an 8 oz container of Cool Whip for convenience.
  7. In another bowl, cream together 8 ounces of softened cream cheese and 1/2 cup sugar until fluffy.
  8. Once the lemon gelatin has cooled, stir it into the cream cheese mixture until well blended. Then, gently fold the whipped cream into the mixture.
  9. Pour the creamy mixture over the cooled crust, spreading it evenly. Chill in the refrigerator.
  10. For the topping, dissolve 6 ounces of strawberry gelatin and 3 ounces of strawberry gelatin in 4 1/2 cups hot water. Chill for about 15 minutes until slightly thickened before pouring gently over the cheese layer.
  11. Allow the dessert to chill until fully set before serving.
