For those with dietary restrictions, feel free to substitute gluten-free flour for all-purpose flour or use a dairy-free butter alternative. Also, if pumpkin puree is hard to find, homemade puree works just as well. Just ensure it’s pure pumpkin with no added sugars or spices for the best result.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 1/3 cup packed and slightly mounded brown sugar
  • 2 eggs
  • 3/4 cup milk
  • 1 (15 ounce) can pumpkin puree

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line 24 muffin cups with paper liners.
  2. In a mixing bowl, sift together 2 1/4 cups of all-purpose flour, 1 tablespoon of pumpkin pie spice, 1/2 teaspoon of salt, 1 tablespoon of baking powder, and 1/2 teaspoon of baking soda; set the aside for now.
  3. In a large bowl, cream together 1/2 cup of softened butter, 1 cup of white sugar, and 1/3 cup of packed brown sugar until the mixture is light in color and fluffy.
  4. Add in 2 eggs, mixing until fully incorporated, then pour in 3/4 cup of milk and 1 can (15 ounces) of pumpkin puree, stirring until everything is well combined.
  5. Gradually stir in the flour mixture, a little at a time, mixing just until incorporated. Don’t overmix, or the cupcakes might be tough.
  6. Divide the batter evenly among the lined muffin cups, using slightly more than 1/8 of a cup in each.
  7. Bake in the preheated oven for about 20 minutes, or until the tops spring back when lightly pressed.
  8. Let the cupcakes cool in the pans for about 5 minutes, then transfer them to a wire rack to cool completely.
  9. Once cooled, frost with K’s Pie Spice Cream Cheese Frosting for an extra special touch.
