When it comes to substitutions, you can easily switch butter for margarine if you prefer, but I always recommend using chilled ingredients for a better texture. If you’re looking for a gluten-free option, consider using a gluten-free flour blend; just be aware that the texture may vary slightly. For those with allergies, make sure to check the brands of shortening and margarine for any potential allergens, and always source high-quality ingredients for the best flavor.

Serving Size1 (271 g)

Ingredients

  • 1 teaspoon salt
  • 2 1/4 cups flour, all-purpose
  • 2 tablespoons butter or 2 tablespoons margarine, chilled
  • 3/4 cup shortening, well chilled
  • 5 tablespoons water, well chilled

Instructions

  1. Sift 2 1/4 cups of flour and 1 teaspoon of salt into a bowl.
  2. Cut 3/4 cup of chilled shortening and 2 tablespoons of chilled butter or margarine into 4 to 5 pieces and drop them into the bowl.
  3. Attach the bowl to your Kitchenaid mixer with the flat beater attachment.
  4. Turn to Stir Speed and mix, cutting the shortening into the flour until the particles are about the size of small peas, which takes around 30 seconds.
  5. Add 5 tablespoons of chilled water, one tablespoon at a time, until all the flour particles are moistened, using just enough water to form a ball.
  6. Monitor the dough closely, as over mixing will yield a tough crust.
  7. Chill the dough in the refrigerator for 15 minutes to let it rest and firm up.
  8. Roll the dough to 1/8-inch thickness between two pieces of waxed paper, which helps prevent sticking.
  9. Fold the pastry into quarters, gently ease it into a pie plate, and unfold it, pressing firmly against the bottom and sides of the plate.
  10. Trim and crimp the edges to your desired finish.
  11. If making a baked pastry shell, prick the sides and bottom with a fork to prevent bubbling.
  12. Bake at 450°F for 8 to 10 minutes, or until it is light brown.
  13. Cool completely before filling your pie with your favorite ingredients.
