For those looking to customize, other short-grain rices can be used in place of bomba rice, although the texture may vary slightly. If you’re avoiding dairy, consider using plant-based milk and cream alternatives to achieve similar results. Always check for allergies with vanilla bean and dairy products when serving others.

  • 1/2 vanilla bean
  • 2 cups whole milk
  • 2 tablespoons whole milk

  2. Add 2 cups of whole milk to the saucepan and bring it to a simmer over medium heat.
  3. Stir in 1/3 cup of bomba rice and continue to simmer, stirring occasionally, until the mixture thickens to the consistency of oatmeal, which should take about 25 to 30 minutes.
