Lime Cookies are the perfect zesty treat to brighten your day. With a delightful combination of butter, sugar, and lime, they offer a refreshing twist that sets them apart from ordinary cookies. Let’s whip up some of the delightful cookies together.

If you’re looking to switch things up, consider substituting lemon zest for lime zest for a different citrus kick. For those with allergies, ensure your butter is dairy-free or substitute a plant-based alternative. Quality ingredients will really shine through in the cookies, so opt for fresh lime juice and good-quality vanilla. And remember, feel free to get creative with the sugars; regular granulated sugar can work just as well.

Lime Cookies Recipe
Ingredients
- 1 cup butter
- 1/2 cup granulated sugar
- 3/4 cup confectioners’ sugar
- 2 egg yolks
- 1 teaspoon vanilla
- 1 teaspoon lime zest
- 2 1/4 cups flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- coarse sugar
- 1 1/2 cups confectioners’ sugar
- 2 tablespoons green decorator sugar (I used regular sugar)
- 3 tablespoons lime juice
Instructions
- In a large mixing bowl, beat 1 cup of butter, 1/2 cup of granulated sugar, and 3/4 cup of confectioners’ sugar until the mixture is fluffy and creamy.
- Next, beat in 2 egg yolks, 1 teaspoon of vanilla, and 1 teaspoon of lime zest until well combined.
- In a separate bowl, whisk together 2 1/4 cups of flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt, then gradually stir the dry mixture into the butter mixture until fully incorporated.
- To enhance flavor, chilling the dough for 30 minutes is suggested, but I find skipping the step works just fine too.
- Roll tablespoonfuls of the dough into balls, then flatten them slightly and sprinkle with coarse sugar.
- Arrange the cookies on a baking sheet and bake in a preheated oven at 350 degrees Fahrenheit for 15 to 20 minutes or until the edges are lightly golden.
- While the cookies are cooling, whisk together 1 1/2 cups of confectioners’ sugar, 2 tablespoons of green decorator sugar, and 3 tablespoons of lime juice to create a zesty glaze.
- Once the cookies have cooled completely, drizzle or spread the glaze over each cookie to finish them off.
