For those watching their dietary intake, feel free to swap out the all-purpose flour with whole wheat flour for a heartier roll, or substitute the nonfat dry milk powder with a dairy-free alternative if lactose is an issue. Serving Size1 (936 g)

Ingredients

  • 3 cups all-purpose flour
  • 2 (1/4 ounce) packages active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup nonfat dry milk powder
  • 1 1/4 cups water (105-115 degrees)
  • 1 large egg, slightly beaten
  • 8 tablespoons butter, melted
  • 2 tablespoons butter flavor shortening

Instructions

  1. Place 2 cups of all-purpose flour in a large mixing bowl.
  2. Add 2 (1/4 ounce) packages of active dry yeast, 1 teaspoon of salt, 2 tablespoons of sugar, and 1/4 cup of nonfat dry milk powder to the bowl and set aside.
  3. In another mixing bowl, combine 1 1/4 cups of water (105-115 degrees) and 1 large beaten egg, stirring to blend.
  4. Make a well in the center of the dry ingredients and pour the water mixture into the well.
  5. Mix by hand, beating 150 strokes while frequently scraping the bottom and sides of the bowl.
  6. Add 1/2 of the melted butter (4 tablespoons) and beat to incorporate into the mixture.
  7. Gradually add the remaining flour, about 1/3 cup at a time, beating to incorporate each addition until fully mixed.
  8. Cover the bowl with plastic wrap and set the dough in a warm, draft-free place, like an oven with a pan of hot tap water on the rack below.
  9. Allow the dough to rise until doubled in bulk, about 1 hour.
  10. Coat the cups, bottoms, and sides of a 12-cup muffin pan (or two small round pans) with butter-flavored vegetable shortening.
  11. Punch down the dough, which will be extremely soft and sticky.
  12. Drop the dough by hand or spoonfuls into the prepared muffin pan cups, aiming for 12 rolls with each roll touching the next.
  13. Brush the dough with the remaining 4 tablespoons of melted butter.
  14. Let the rolls rise, uncovered, in a warm, draft-free place until almost doubled in bulk, about 30 minutes.
  15. Preheat the oven to 400 degrees and bake the rolls on the middle rack for 16-18 minutes.
  16. Once baked, brush the tops of the cooked rolls with the remaining melted butter and serve immediately.
