Marzipan Date Bars offer a delightful combination of chewy dates and nutty almond paste wrapped in a wholesome oat base. Perfect for an afternoon treat or a sweet ending to any meal, the bars are a tasty way to enjoy the rich flavors of marzipan and dates in one bite.

For a butter substitute, you might consider coconut oil or vegan butter for a dairy-free option. If you need a gluten-free version, using a gluten-free flour blend can work well. The almond paste adds a rich flavor, and alternatives can be tricky, so if you can’t find it, try a homemade version with ground almonds and sugar. As for the dates, they not only sweeten the bars but also contribute to their chewy texture; feel free to swap them for other dried fruits if desired, but the taste will change.

- 1 (7 ounce) package pure almond paste (I use Odense brand)
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, cream together 1/2 cup softened butter, 1/2 cup light brown sugar, and 1/4 cup white sugar until fluffy.
- Add 1 egg and 1 teaspoon vanilla, blending well to combine the mixture.
- Next, mix in 3/4 cup flour, 1/2 teaspoon baking soda, and 1/2 teaspoon cinnamon until just combined.
- Stir in 1 1/2 cups oats and 1 (8 ounce) package of chopped dates until everything is evenly coated.
- Press half of the date mixture into the bottom of an ungreased 8X8 glass baking dish, spreading it evenly.
- Roll out 1 (7 ounce) package of pure almond paste between two sheets of wax paper to form an 8X8 square.
- Place the almond paste carefully on top of the date layer and press it down gently to adhere.
- Spread the remaining date mixture on top of the almond paste, pressing it flat to create a smooth layer.
- Bake uncovered for 30 minutes, then let the bars cool for at least 10 minutes before cutting into squares.
If you want to experience the wonder of marzipan in another delightful form, I highly recommend trying Marzipankartoffeln – German Marzipan Potatoes. The sweet, almondy treats are not only fun to make, but they also bring a unique twist to your dessert table that will leave everyone impressed.
