For a dairy-free version, consider using coconut or almond-based ice cream, which can be just as creamy and delicious. If you’re allergic to nuts or gluten, check the ice cream label to ensure no cross-contamination. Fresh raspberries lend a vibrant flavor, but frozen ones work well if fresh isn’t available, just be sure to drain any excess liquid before use to avoid a soggy torte.

Serving Size1 (325 g)

Ingredients

  • 2 kg vanilla and strawberry ripple ice cream
  • 300 g raspberries (fresh or frozen)
  • 10 meringue nests, crushed
  • 300 g raspberries, extra

Instructions

  1. Line a 22cm round spring-form cake tin with plastic wrap, making sure it covers the sides well.
  2. Allow 2 kg of vanilla and strawberry ripple ice cream to soften slightly but not melt completely, making it easier to spread.
  3. Spoon one third of the softened ice cream into the base of the prepared cake tin, smoothing it into an even layer.
  4. Sprinkle half of the 300 g raspberries evenly over the ice cream layer, followed by half of the crushed meringue nests.
  5. Repeat the layering process, adding another third of the ice cream, the remaining raspberries, and the remaining meringues, finishing with a final layer of ice cream.
  6. Cover the cake tin tightly with plastic wrap and place it in the freezer until solid, about 4-6 hours or overnight for best results.
  7. To serve, remove the torte from the freezer and peel off the plastic wrap, carefully turning it onto a large plate.
  8. Top with the extra 300 g of raspberries for that extra flair before slicing and serving.
