Ensure your taco seasoning is gluten-free if needed, and check the labels on the cheese for any potential allergens. Fresh toppings like lettuce, tomato, and onion can be adjusted based on personal preferences or seasonal availability, creating a dish that’s as customizable as it is delicious.

Mexican Pancakes Recipe
Ingredients
- 1 lb lean ground beef
- 1 (1 1/4 ounce) package taco seasoning
- 1 (8 ounce) can tomato sauce
- 1 cup water
- 2 cups pancake mix
- 1 cup milk
- 2 eggs
- 1/2 cup vegetable oil
- 2 tablespoons cornmeal
- 1 cup shredded cheese
- lettuce shredded
- chopped tomato
- chopped onion
Instructions
- In a large skillet, brown 1 lb of lean ground beef over medium heat until fully cooked. Drain off any excess fat. Add 1 (1 1/4 ounce) package of taco seasoning, 1 (8 ounce) can of tomato sauce, and 1 cup of water to the skillet. Simmer the mixture until the flavors blend and the sauce thickens, which should take about 20 minutes. Set the filling aside once done.
- For the pancakes, mix together 2 cups of pancake mix, 1 cup of milk, 2 eggs, and 2 tablespoons of cornmeal in a bowl until well combined. Preheat a griddle to 400°F. Using 1/3 cup of batter for each pancake, pour the batter onto the griddle and grill until each side is golden brown, which usually takes a few minutes per side. Stack the cooked pancakes between sheets of wax paper to keep them warm.
- Once all the pancakes are cooked, spread about 1/2 cup of the meat filling on one half of each pancake. Top each filled pancake with a second pancake, then spread more filling on top. Sprinkle with 1 cup of shredded cheese and any desired toppings such as shredded lettuce, chopped tomato, and chopped onion.
