When preparing Mini Blueberry Cheesecakes, feel free to swap out the Greek yogurt for sour cream if you’re in a pinch, though Greek yogurt adds a nice tang. For those with dairy allergies, non-dairy cream cheese can be a suitable alternative. Always ensure that your blueberries are fresh or properly thawed to maintain that juicy flavor that makes the cheesecakes stand out.

Mini Blueberry Cheesecakes Recipe
Ingredients
- 1/2 cup great value frozen blueberries, thawed
- 1 (250 g) package cream cheese, softened to room temperature
- 3/4 cup 2% Greek yogurt
- 1/4 cup granulated sugar
- 1 large egg
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 12 round vanilla wafer cookies
Instructions
- Preheat your oven to 350°F.
- In a blender, purée the thawed blueberries until smooth, which should take about 30 seconds. Set aside for later.
- In a medium bowl, combine the softened cream cheese, 3/4 cup of Greek yogurt, 1/4 cup of granulated sugar, 1 large egg, 1 tablespoon of cornstarch, and 1 teaspoon of vanilla extract. Use an electric hand mixer to blend until the mixture is smooth, stopping occasionally to scrape down the sides of the bowl.
- Gently fold the puréed blueberries into the cream cheese mixture until well combined.
- Line a 12-count muffin tin with paper liners. Place one vanilla wafer cookie at the bottom of each muffin cup, creating a delightful crust.
- Carefully divide the cheesecake filling evenly among the muffin tins, making sure each cup is filled to the same level.
- Bake in the preheated oven for 22 to 25 minutes, or until the cheesecakes are slightly firm to the touch.
- Once baked, remove from the oven and allow to cool to room temperature. After cooling, transfer the cheesecakes to the refrigerator and chill for at least one hour before serving.
