Ingredients

  • 1 white cake mix
  • 1 cup whole milk
  • 3 eggs
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons melted butter
  • decorator icing
  • pre-packaged tubes in purple, green, and gold (yellow)
  • sparkling white decorator sugar

Instructions

  1. Preheat your oven to 350 degrees and line two mini-cupcake pans with paper liners.
  2. In a large bowl, combine 1 white cake mix, 1 cup of whole milk, and 3 eggs. Use an electric mixer to beat the mixture for 1 minute on medium speed.
  3. Add 1/2 cup of melted butter to the mix and continue beating for an additional minute until everything is well combined.
  4. In a small bowl, combine 1/2 cup of brown sugar, 2 teaspoons of ground cinnamon, and 2 tablespoons of melted butter. Stir until it’s mixed and crumbly, creating a delightful topping.
  5. Using a small ice cream scoop, fill each muffin liner with 1 scoop of the batter.
  6. Sprinkle the brown sugar mixture over each batter-filled liner, then top with an additional 2 scoops of batter, filling each liner to about 2/3 full.
  7. Bake the cupcakes for 15 minutes or until you can insert a toothpick into the center and it comes out clean.
  8. Allow the cupcakes to cool completely before decorating.
  9. Once cooled, take your pre-packaged decorator icing tubes in festive Mardi Gras colors—purple, green, and gold (yellow)—and dollop each color on top of the cupcakes. Finally, sprinkle sparkling white decorator sugar over each cake for that extra flair.
