If you’re on the hunt for a delightful dessert, the Mocha Cheesecake (No Instant Coffee Crystals) is a fantastic choice. The creamy, rich treat promises to satisfy even the most discerning palates with its luscious layers of chocolate and coffee flavors. Get your forks ready for a slice of indulgence.

When creating the Mocha Cheesecake, you might consider substituting the neufchatel cheese with regular cream cheese if you’re looking for a creamier texture. Adjustments can also be made with the sugar, perhaps using a sugar substitute for those mindful of their intake. Ensure any chocolate you choose is of high quality for the best flavor, and keep an eye on the temperature of egg whites—they should be at room temperature to whip up nicely. If allergies are a concern, always check labels for potential allergens in the graham crackers or chocolate.

Mocha Cheesecake (No Instant Coffee Crystals) Recipe
Ingredients
- 2 cups crushed chocolate graham crackers or 2 cups chocolate cookies
- 1 1/2 tablespoons sugar
- 1 egg white
- 1/4 cup butter, melted
- 2/3 cup sugar
- 1/3 cup all-purpose flour
- 1 1/2 tablespoons cornstarch
- 1/2 cup sour cream
- 2 (8 ounce) packages neufchatel cheese or 2 (8 ounce) packages cream cheese
- 3 eggs
- 1 teaspoon vanilla
- 2/3 cup double-strain coffee
- 1/3 cup ricotta cheese
- 3 egg whites, at room temperature
- 4 tablespoons sugar
- 1/4 cup dark chocolate
- 1/4 cup milk chocolate
Instructions
- Preheat the oven to 375 degrees Fahrenheit.
- In a small bowl, combine 2 cups of crushed chocolate graham crackers or chocolate cookies with 1 1/2 tablespoons of sugar. Stir in 1/4 cup melted butter and 1 egg white until well mixed.
- Press the mixture firmly onto the bottom of a 9-inch springform pan lined with foil to prevent sticking. Bake for about 6-8 minutes, until the edges feel firm and dry. Set aside to cool.
- Lower the oven temperature to 325 degrees Fahrenheit.
- In another bowl, mix together 2/3 cup sugar, 1/3 cup all-purpose flour, and 1 1/2 tablespoons cornstarch; set aside.
- Using a stand mixer or a large bowl, beat one package of cream cheese with 1/2 cup sour cream until the mixture is airy. Add the second package of cream cheese, along with 3 eggs and 1 teaspoon vanilla, mixing until smooth and well incorporated.
- Gradually add the flour mixture to the cream cheese mixture, beating until fully blended. Then, add in 2/3 cup of double-strained coffee, 1/3 cup ricotta cheese, 4 tablespoons sugar, and 3 egg whites. Beat until the mixture is velvety smooth.
- Pour half of the batter into the prepared crust. Melt 1/4 cup each of dark and milk chocolate, either in the microwave or via a double boiler, then mix it into the remaining batter until well combined.
- Pour the chocolate batter into the springform pan. At the point, feel free to get creative with swirls or layers for a beautiful presentation.
- Prepare a water bath for baking. Bake the cheesecake for about 1 hour and 15 minutes or until it’s nearly set; the center should jiggle slightly while the edges are firm.
- Once baked, run a knife around the edges of the cake before removing the sides of the pan. Cover the cheesecake and refrigerate for 6-8 hours or overnight to allow it to set completely.
