For those with gluten sensitivities, using a gluten-free flour blend could work, though the texture may vary. Freshly ground flour can enhance the flavor, and for a nuttier taste, try adding a touch of toasted sesame oil. Always ensure your ingredients are high-quality to achieve the best results.

Ingredients

  • 2 cups bread flour
  • 1 cup water, nearly boiling
  • 1/8 teaspoon salt
  • 1 teaspoon sesame oil

Instructions

  1. Mix 1/8 teaspoon salt into 2 cups bread flour using a fork until well combined.
  2. On a clean counter, pile the flour and create a well in the center with your fingers.
  3. Pour 1 teaspoon sesame oil into the well, followed by about half of the 1 cup nearly boiling water.
  4. Mix the flour into the water gradually, forming a dough. Add more water a little at a time until you achieve a damp dough.
  5. Knead the dough for about 10 minutes, or until it becomes smooth and elastic.
  6. Divide the dough into 18 to 20 equal-sized balls.
  7. Flatten each ball and roll into discs that are about 2 to 3 inches in diameter.
  8. Brush the tops of half the discs with a little oil and place the other half on top, creating sandwiches.
  9. Dust with a little flour and roll each sandwich out into thin circles, approximately 6 to 8 inches across.
  10. Stack the pancakes with waxed paper between each one to prevent sticking.
  11. Heat a griddle or a large ungreased skillet over medium-low heat. Cook each pancake one at a time, turning often until bubbles form in the dough. Avoid browning them.
  12. Using the tip of a knife, carefully separate each pancake into two halves and place them on a warm plate. Cover with a dampened towel that has been moistened with hot water to keep them warm and soft.
  13. Continue the process until all the pancakes are cooked.
