Ingredients

  • 1 cup sugar
  • 4 egg yolks
  • 2 tablespoons flour
  • 2 cups milk
  • 1 teaspoon vanilla
  • 1 (12 ounce) package vanilla wafers
  • 3 large ripe bananas, sliced
  • 8 ounces whipped topping

Instructions

  1. In a medium saucepan, combine 1 cup sugar, 4 egg yolks, 2 tablespoons flour, and 2 cups milk. Mix well until there are no lumps.
  2. Place the saucepan over medium heat and stir continually until the mixture reaches a boil. Keep stirring for about 2 minutes until it thickens, then remove from heat.
  3. Add 1 teaspoon vanilla to the thickened mixture and stir to combine. Let it cool slightly while you prepare the layers.
  4. In a 2-quart dish, layer half of the 12-ounce package of vanilla wafers on the bottom.
  5. Next, add half of the sliced bananas, making sure they’re evenly distributed.
  6. Pour half of the pudding mixture over the bananas and wafers, smoothing it out gently.
  7. Repeat the layering process with the remaining vanilla wafers, bananas, and pudding, finishing with the pudding on top.
  8. Cover the dish and refrigerate for 1 hour to allow the flavors to meld together and the pudding to set.
  9. Before serving, top with 8 ounces of whipped topping for that final creamy finish.
