For a gluten-free twist, you could swap out the French bread for a gluten-free version or a mix of gluten-free bread crumbs. Fresh herbs can really enhance the flavor, so if you have fresh parsley, thyme, and sage on hand, you might want to use those instead of dried. If you’re watching your sodium intake, consider low-sodium chicken broth to keep the dressing balanced without sacrificing flavor.

Ingredients

  • 3 – 3 1/2 cups cornbread cubes (not Jiffy, used your favorite recipe but double the eggs called for in the recipe)
  • 1/2 loaf French bread, pulsed in the food processor
  • 8 – 10 ounces Pepperidge Farm herb seasoned stuffing mix
  • 1/3 cup grated carrot
  • 1/2 cup finely chopped green onion
  • 1/4 cup finely diced green pepper
  • 1/4 cup finely diced celery
  • 1/4 cup finely chopped pecans
  • 1 cup cream-style corn
  • 1 tablespoon dried parsley or 1/4 cup fresh parsley
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon sage
  • 1/2 teaspoon garlic pepper seasoning
  • 3 – 4 eggs
  • 1/2 cup melted butter, divided
  • 2 – 2 1/2 cups chicken broth

Instructions

  1. Grease a 4-quart casserole dish and set it aside.
  2. Preheat your oven to 350 degrees.
  3. In a large mixing bowl, combine all ingredients except the raw eggs, 1/2 cup melted butter, and chicken broth. Toss everything together until mixed well.
  4. Now, add the 3-4 raw eggs, 1/4 cup of the melted butter, and 2 – 2 1/2 cups of chicken broth. Knead the mixture together until it holds together nicely.
  5. Transfer the mixture into the greased casserole dish and pat the top to smooth it out.
  6. Pour the remaining 1/4 cup of melted butter over the top of the dressing.
  7. Cover the dish and bake in the preheated oven for 1 hour.
  8. Once baked, remove from the oven, uncover, and let it sit for 10 minutes before serving. Be careful not to overcook; otherwise, the dressing could dry out.
