Old Fashioned Date Pudding recipe

When preparing the Old Fashioned Date Pudding, consider using fresh, high-quality dates for the best flavor. If you’re looking for alternatives, you could swap out the pecans for walnuts or omit nuts altogether for a nut-free version. For those with egg allergies, a flaxseed or applesauce substitute may work well, keeping in mind that it might slightly alter the texture of the pudding.

Ingredients

  • 1 cup dates, chopped fine
  • 1 cup hot water
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • 2 tablespoons butter
  • 1 egg
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup pecans
  • 1 cup brown sugar
  • 2/3 cup water
  • 2/3 cup chopped dates

Instructions

  1. In a mixing bowl, combine 1 cup of chopped fine dates with 1 cup of hot water and 1 teaspoon of baking soda. Allow the mixture to stand for several minutes to soften the dates.
  2. Add to the bowl 1 cup of white sugar, 2 tablespoons of butter, 1 egg, 1 1/2 cups of flour, 1 teaspoon of baking powder, and 1/2 cup of pecans. Mix everything together well until it’s nicely combined.
  3. Pour the batter into a greased 9×9 inch pan, spreading it evenly to ensure even baking.
  4. Bake in a preheated oven at 400 degrees for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the pudding is baking, prepare the sauce by combining 1 cup of brown sugar, 2/3 cup of water, and 2/3 cup of chopped dates in a saucepan.
  6. Cook over medium heat for about 3 minutes, stirring constantly until the sugar has dissolved and the mixture is slightly thickened.
  7. Once the pudding is done, pour the warm sauce over the top right away, or you can spoon it on after cutting the pudding into pieces.
  8. Serve the date pudding warm, topped with a generous dollop of whipped cream.
