Pease Pudding (Pureed Peas) is a simple yet comforting dish that highlights the earthy flavor of split peas. The creamy puree is perfect as a side or a hearty topping, making it a versatile choice for any meal. Let’s explore how to make the lovely dish.

When preparing Pease Pudding, it’s important to select high-quality dry split peas, as older peas may take longer to cook and not yield the best texture. If you’re looking for alternatives, you can use frozen peas; however, they will alter the flavor and texture slightly. Make sure to rinse the peas thoroughly to remove any debris and ensure they’re clean before cooking.

Pease Pudding (Pureed Peas) Recipe
Ingredients
- 2 cups dry split peas
- 2 cups water
- 1 teaspoon salt
- 4 tablespoons butter
- 1/4 teaspoon white pepper
Instructions
- Wash the split peas thoroughly under cold running water until the water runs clean. Pick over the peas and discard any discolored ones and any foreign objects such as small stones.
- In a medium saucepan, bring 2 cups of water to a boil and slowly drop in the peas. Reduce the heat and simmer, partially covered, for 1.5 hours, or until the peas can be easily mashed with a spoon against the side of the pot.
- Drain the peas in a colander and force them through a fine sieve set over a large bowl to achieve that smooth texture.
- Return the pureed peas to the pan and cook over low heat, stirring constantly, until the puree is heated through. Then stir in the salt, butter, and white pepper. Serve immediately for the freshest taste.
