Pecan Blondie Caramel Cups (Pillsbury) Recipe
Ingredients
- 1/2 cup butter
- 1 cup brown sugar (firmly packed)
- 1 teaspoon vanilla
- 1 egg
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup pecans, chopped
- 20 caramels
- 1 tablespoon water
- 1/2 cup semi-sweet chocolate chips
- 16 pecan halves (for garnish)
Instructions
- Heat your oven to 350°F and line 16 muffin tins with baking cups to prepare for the batter.
- In a medium saucepan over low heat, melt 1/2 cup butter until completely melted. Remove from heat and stir in 1 cup firmly packed brown sugar until combined.
- Add 1 teaspoon vanilla and 1 egg to the mixture, mixing well to ensure everything is nicely blended.
- In a separate bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, and 1/4 teaspoon salt before gradually adding it to the butter-sugar mixture, blending thoroughly.
- Stir in 1/2 cup chopped pecans, then pour the batter evenly into the lined muffin tins, filling each about 2/3 full.
- Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- For the topping, melt 20 caramels with 1 tablespoon water in a small saucepan over low heat, stirring constantly until smooth.
- As soon as the muffins come out of the oven, place 1/2 cup semi-sweet chocolate chips evenly into the middle of each muffin cup.
- Spoon a scant tablespoon of the melted caramel over the chocolate chips in each cup. If the caramel starts to thicken, add a little more water to keep it pourable.
- Top each cup with a pecan half for a finishing touch, and store them in a tightly covered container once cooled.
