When it comes to making Pioneer Woman Cinnamon Rolls (Healthier.), you can easily swap out ingredients based on dietary preferences or availability. For instance, using almond milk or a dairy-free butter can accommodate lactose intolerance, and you might try coconut sugar instead of regular sugar for a different flavor profile. Just know that using whole wheat flour provides a nuttier taste and more fiber, while ground flax seeds can boost the nutritional value. Keep an eye out for fresh yeast for the best rise, and remember to store your ingredients properly to maintain their quality.

Ingredients

  • 1 quart whole milk
  • 1 cup vegetable oil
  • 1 cup sugar
  • 2 (1/4 ounce) packages active dry yeast
  • 4 cups all-purpose flour
  • 4 cups whole wheat flour
  • 3 tablespoons ground flax seeds
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon salt
  • 3/4 cup butter
  • 1 cup sugar
  • 1/8 cup cinnamon
  • 1 cup all-purpose flour
  • 16 ounces powdered sugar
  • 2 teaspoons maple flavoring
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 cup brewed coffee
  • 1 teaspoon salt

Instructions

  1. In a pan, mix together 1 quart of whole milk, 1 cup of vegetable oil, and 1 cup of sugar. Heat until just before boiling, then turn off the heat and let it cool for 45 minutes to 1 hour.
  2. Once the mixture is lukewarm, sprinkle in both packages of active dry yeast and let it sit for a minute. Stir in 8 cups of all-purpose flour until combined. Cover and let rise for at least one hour.
  3. After the first rise, add 1 more cup of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and 1 tablespoon of salt. Mix well and, if needed, refrigerate for up to two days (just remember to punch it down if it overflows).
  4. To prepare the rolls, generously flour your rolling surface. Take half of the dough and form a rough rectangle, then roll it out thinly.
  5. Drizzle 1/2 to 1 cup of melted butter over the dough, then sprinkle 1 cup of sugar followed by a generous amount of cinnamon on top.
  6. Starting from the opposite end, roll the dough tightly toward you and pinch the seam to seal it. Slice the roll into ¾ to 1-inch thick pieces.
  7. Spread 1 tablespoon of melted butter in a seven-inch round foil pan and place the cut rolls in the buttered pan. Repeat with the remaining dough.
  8. Allow the rolls to rise for 20 to 30 minutes before baking in a preheated oven at 375 degrees until they are light golden brown, around 15 to 18 minutes.
  9. For the frosting, mix together 16 ounces of powdered sugar, 2 teaspoons of maple flavoring, 1/2 cup of milk, 1/4 cup of butter, 1/4 cup of brewed coffee, and 1 teaspoon of salt until smooth. Drizzle generously over the warm rolls.
