Pumpkin Cranberry Bread (Abm) is a delightful blend of warm spices and sweet tartness, perfect for fall and holiday gatherings. The easy-to-make bread is ideal for your bread machine and will fill your home with a cozy aroma that’s hard to resist. Let’s get baking.

When it comes to ingredient substitutions, feel free to use whatever alcohol you have on hand for soaking the cranberries, or swap in juice for a non-alcoholic version. The bread flour is key for the right texture, but all-purpose flour can work in a pinch. Ensure your yeast is fresh for optimal rising, and if you have a dairy allergy, consider using a dairy-free milk powder instead of dry buttermilk.

Pumpkin Cranberry Bread (Abm) Recipe
Ingredients
- 2/3 cup dried cranberries (such as Craisins)
- 2 tablespoons brandy (or bourbon, or rum, or juice)
- 2/3 cup warm water
- 1/3 cup pumpkin puree
- 2 tablespoons vegetable oil
- 3 cups bread flour
- 3 tablespoons brown sugar, packed
- 2 tablespoons dry buttermilk
- 1 tablespoon gluten
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons pumpkin pie spice
- 2 teaspoons yeast
Instructions
- Soak the 2/3 cup dried cranberries in 2 tablespoons brandy (or your chosen substitute) in a bowl covered with plastic wrap for about an hour.
- Add all remaining ingredients, which include 2/3 cup warm water, 1/3 cup pumpkin puree, 2 tablespoons vegetable oil, 3 cups bread flour, 3 tablespoons brown sugar, packed, 2 tablespoons dry buttermilk, 1 tablespoon gluten, 1 1/2 teaspoons salt, 1 1/2 teaspoons pumpkin pie spice, and 2 teaspoons yeast, into the bread pan according to the manufacturer’s instructions.
- Once the dough is mixed, keep an eye on its consistency—it should be a bit tacky but not overly sticky.
- When the bread maker signals for fruit and nut additions, gently fold in the soaked cranberries along with any remaining soaking liquid from the bowl, ensuring they’re evenly distributed throughout the dough.
- Select either the medium crust setting or the regular/white cycle on your bread machine, and let it do its thing, or you can opt to bake it in the oven for about 30 minutes at 350°F.
- If you’re feeling fancy, consider drizzling a lemon glaze or vanilla glaze over the top once cooled.
