When selecting ingredients for the muffins, feel free to substitute the margarine with butter for a richer flavor, or even a plant-based alternative if you’re looking for a dairy-free option. If you’re keeping an eye on sugar intake, consider using a sugar substitute for a lighter version. Always check for allergies, particularly with eggs and dairy, and ensure your canned pumpkin is pure pumpkin and not a spiced blend.

Ingredients

  • 1/4 cup margarine, softened
  • 1/2 cup sugar
  • 1/4 cup packed brown sugar
  • 2/3 cup cooked pumpkin or 2/3 cup canned pumpkin
  • 1/2 cup buttermilk
  • 2 eggs
  • 2 tablespoons molasses
  • 1 teaspoon orange zest
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/3 cup flour
  • 3 tablespoons brown sugar
  • 2 tablespoons cold margarine

Instructions

  1. In a large bowl, cream together 1/4 cup of softened margarine, 1/2 cup of sugar, and 1/4 cup of packed brown sugar until smooth and fluffy.
  2. Add 2/3 cup of cooked or canned pumpkin, 1/2 cup of buttermilk, 2 eggs, 2 tablespoons of molasses, and 1 teaspoon of orange zest; stir to mix well until fully combined.
  3. In a separate bowl, mix together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, 1 teaspoon of pumpkin pie spice, and 1/4 teaspoon of salt.
  4. Gradually add the dry ingredients to the creamed mixture, stirring just until combined; be careful not to overmix or the muffins will be tough.
  5. Fill greased or paper-lined muffin cups two-thirds full with the batter, making sure to leave some space for rising.
  6. For the streusel topping, mix together 1/3 cup of flour and 3 tablespoons of brown sugar; cut in 2 tablespoons of cold margarine with a pastry blender until the mixture resembles coarse meal.
  7. Sprinkle the streusel topping evenly over each muffin batter.
  8. Bake the muffins at 375 degrees for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 5 minutes, then remove the muffins to a wire rack to cool completely.
