For those looking to switch things up, vegetable oil can be used instead of shortening, though it might alter the flavor slightly. If you have a dairy sensitivity, substitute almond or soy milk for the milk and use a dairy-free butter. Additionally, ensure your yeast is fresh for the best rise, and if powdered sugar isn’t available, granulated sugar can work in a pinch for the glaze, but it won’t be as smooth.

Serving Size1 (84 g)

Ingredients

  • 1 cup water, boiling
  • 1/2 cup shortening
  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1 cup milk
  • 2 compressed yeast cakes, soaked
  • 2 eggs, well beaten
  • 5 -6 cups flour
  • 4 cups powdered sugar
  • 2 tablespoons butter
  • 2 tablespoons cornstarch
  • vanilla
  • water, hot

Instructions

  1. Pour 1 cup of boiling water over 1/2 cup of shortening, 3/4 cup of sugar, and 1 teaspoon of salt in a large mixing bowl, stirring until the shortening melts completely.
  2. Once melted, mix in 1 cup of milk, 2 soaked compressed yeast cakes, and 2 well-beaten eggs until well combined.
  3. Gradually incorporate 5 to 6 cups of flour, mixing until the dough is no longer sticky but not too stiff.
  4. Cover the bowl with plastic wrap or a clean towel and let the dough rise in a warm place until doubled in size, about 1 to 2 hours.
  5. Once risen, gently mix down the dough and place it in the refrigerator overnight for a slow rise.
  6. When you’re ready to make the donut buns, remove the dough from the fridge and set it out to warm up a bit. Prepare your frying pan or deep fryer.
  7. Shape the dough into bun forms and place them in a greased pan to rise again until doubled, about 30 minutes.
  8. Heat oil in your fryer or pan and fry the donuts until they are golden brown on both sides, about 2-3 minutes per side.
  9. For the glaze, whisk together 4 cups of powdered sugar, 2 tablespoons of melted butter, 2 tablespoons of cornstarch, a splash of vanilla, and enough hot water to achieve a thin consistency for dipping.
