For those who may have dietary restrictions or preferences, feel free to swap the raisins for any dried fruit you enjoy, like cranberries or apricots. Using a non-dairy milk can work, but it may change the texture slightly. Always ensure your eggs are fresh and, if you’re allergic, consider an egg substitute for a similar custard effect.

  • 3 cups milk
  • 1/2 cup raisins
  • 3 egg yolks
  • 1 cup whipping cream
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1 cup heavy cream, for the top

Instructions

  1. Combine 1 cup long grain rice, 2 cups water, and 1 teaspoon salt in a large saucepan and bring to a simmer for 3 minutes.
  2. Add 3/4 cup granulated sugar and 3 cups milk, stirring occasionally, and bring to a slow simmer over low heat.
  3. Cook uncovered for about 30 minutes or until the milk is absorbed and the rice is tender; allow to cool.
  4. Soak 1/2 cup raisins in water until they are plump, which can take about 10-15 minutes.
  5. Preheat the oven to 300 degrees Fahrenheit and butter a 1 1/2 quart baking dish generously.
  6. In a bowl, whisk together 3 egg yolks, 1 cup whipping cream, and 2 teaspoons vanilla extract until smooth; combine the mixture with the cooled rice and mix thoroughly. Drain the raisins and fold them into the rice mixture.
  7. Transfer the rice mixture into the buttered baking dish and sprinkle 1 teaspoon cinnamon evenly over the top.
  8. Bake uncovered in the preheated oven until the edges are set, but the center remains creamy, which will take about 25 minutes.
  9. Gently heat 1 cup heavy cream until lukewarm and pour it over the top of the baked pudding.
