For those who might have nut allergies, feel free to skip the pecans or substitute with sunflower seeds for a similar crunch. Using high-quality unsalted butter and chocolate chips can really enhance the flavor, so don’t skimp on those if you can help it. If you’re in a pinch, regular all-purpose flour can stand in for pastry flour without much fuss.

Ingredients

  • 2 -3 wood chips
  • 2 ounces pecans, chopped
  • 4 ounces unsalted butter
  • 4 ounces semi-sweet chocolate chips
  • 2 large eggs
  • 2 ounces pastry flour
  • 1 ounce cocoa powder
  • 6 1/2 ounces granulated sugar

Instructions

  1. Put 2-3 wood chips on the stove or grill until they start smoking.
  2. Place 2 ounces of chopped pecans in a bowl, then nestle that bowl into a much larger bowl. Drop the wood chips into the larger bowl, surrounding the pecan bowl, then cover everything tightly with foil and let smoke for five minutes.
  3. Melt 4 ounces of unsalted butter and 4 ounces of semi-sweet chocolate chips together over a double boiler. Once melted, slowly whisk in 2 large eggs until well combined.
  4. Sift together 2 ounces of pastry flour, 1 ounce of cocoa powder, and 6 1/2 ounces of granulated sugar. Gently fold in the smoked pecans into the chocolate mixture.
  5. Pour the final batter into a cast-iron skillet (or any regular pan), filling it about two inches deep.
  6. Bake in a preheated oven at 325° Fahrenheit for approximately 40 minutes, or until a toothpick comes out clean.
  7. Serve the brownies warm, topped with your favorite ice cream.
