If you’re looking to swap out ingredients, light margarine can be replaced with butter for a richer taste. For a dairy-free option, try using non-dairy sour cream, and if allergies are a concern, you can use a gluten-free flour blend in place of all-purpose flour. Each ingredient plays a role in the cookie’s overall flavor and texture, so be mindful with substitutions.

Ingredients

  • 1 cup sugar
  • 1/4 cup brown sugar
  • 8 ounces fat free sour cream
  • 1/2 cup light margarine or 1/2 cup butter
  • 1/2 cup shortening
  • 1/2 cup dark molasses
  • 1 large egg
  • 3 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 2 teaspoons ground cloves
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix together 1 cup sugar, 1/4 cup brown sugar, 8 ounces of fat-free sour cream, 1/2 cup of light margarine or butter, 1/2 cup of shortening, 1/2 cup of dark molasses, and 1 large egg until the mixture is smooth and well combined.
  3. Gradually stir in the remaining ingredients: 3 1/4 cups all-purpose flour, 1 1/2 teaspoons baking soda, 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, 1 teaspoon ground nutmeg, 2 teaspoons ground cloves, and 1/2 teaspoon salt. Be careful not to over mix the dough.
  4. Drop rounded tablespoonfuls of dough onto an ungreased cookie sheet, placing them about 2 inches apart.
  5. Bake for approximately 10-12 minutes, or until the cookies are a light golden brown. Since it’s tricky to judge by color, gently touch the center of a cookie; if it bounces back almost entirely, they are ready.
  6. Allow the cookies to cool on a wire rack before serving. The cookies can be enjoyed plain or complemented by a dip in whipped cream.
