Sourdough (Feed and Starter) is a delightful way to nurture your baking journey. Creating a robust starter not only enhances the flavor of your bread but also builds a bond with your ingredients. Let’s get started on the fermenting adventure.

For those with lactose concerns, dairy-free or plant-based powdered milk can be a suitable alternative. When selecting flour, opt for unbleached all-purpose flour for better fermentation. Be cautious with sugar; while it helps yeast activation, adjust based on your sweetness preference. Ensure your yeast is fresh to avoid sluggish rising, and always store your starter in a clean container to prevent contamination.

- 1 cup non-fat powdered milk
- 1 cup flour
- 1/4 cup sugar
- 1 teaspoon yeast
Instructions
- Mix 1 cup of non-fat powdered milk, 1 cup of flour, and 1/4 cup of sugar in a bowl, leaving out the yeast for now. Store the mixture as feed until you’re ready to make the magic happen. When you’re prepared to start, add 1 teaspoon of yeast to the mix. Gradually stir in 2 cups of warm water, making sure everything combines smoothly.
- Cover the mixture and let it sit on the counter for 6-8 hours. The is when the yeast will start to work its wonders, giving life to your starter. After the resting period, you can use your starter as needed, but don’t forget to feed it afterward by adding a proportional amount of flour and water to keep it healthy.
