When it comes to substitutions, you could swap out the butter for coconut oil if you’re looking for a dairy-free option. The reduced-fat sour cream can easily be replaced with yogurt, which will keep the moisture intact. If you have nut allergies, feel free to leave out the walnuts or substitute them with pumpkin seeds for that pleasant crunch. Always opt for fresh spices and high-quality ingredients for the best flavor.

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup cinnamon applesauce
  • 1 tablespoon flax seed meal
  • 3 tablespoons wheat germ
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup flour
  • 3/4 cup whole wheat flour
  • 1 cup pumpkin
  • 1/2 cup reduced-fat sour cream or 1/2 cup yogurt
  • 2/3 cup walnuts, chopped

Instructions

  1. Cream together 1/2 cup of butter, 1/2 cup of sugar, and 1/2 cup of brown sugar in a mixing bowl until light and fluffy.
  2. Add in 1/3 cup of cinnamon applesauce, 2 eggs, and 1 teaspoon of vanilla; mix well to combine all the wet ingredients.
  3. In a separate bowl, whisk together 3/4 cup of flour, 3/4 cup of whole wheat flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 teaspoon of cinnamon along with a pinch of nutmeg and 1/2 teaspoon of pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined; don’t overmix as we want a tender texture.
  5. Gently fold in 1 cup of pumpkin, 1/2 cup of reduced-fat sour cream or yogurt, and 2/3 cup of chopped walnuts until evenly distributed.
  6. Spoon the batter into large greased muffin tins or a bundt pan. The recipe will yield 12 large muffins or one full bundt.
  7. Bake the muffin tins for 25-30 minutes and the bundt for 50-60 minutes. A toothpick inserted in the center should come out clean; check for doneness to avoid any surprises.
