For those with dietary restrictions, feel free to substitute the butter with a dairy-free alternative or use applesauce for a lower-fat option. If you’re nut-sensitive, you can easily omit the walnuts or replace them with seeds. As for the dried fruits, if golden raisins and dates aren’t available, regular raisins or chopped dried apricots would work just fine. Always choose the freshest ingredients for the best flavor.

Ingredients

  • 1 cup canned pumpkin
  • 1/2 cup butter, softened
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/3 cup sour cream
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup chopped walnuts
  • 1/2 cup golden raisins
  • 1/2 cup chopped dates

Instructions

  1. Beat together 1 cup canned pumpkin, 1/2 cup softened butter, 1 1/4 cups sugar, 2 eggs, 1/3 cup sour cream, and 1 teaspoon vanilla in a large mixing bowl until well blended.
  2. In a separate bowl, combine 1 1/2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 2 teaspoons pumpkin pie spice; stir to mix.
  3. Slowly add the dry ingredients to the wet mixture, stirring until just moistened. Be careful not to overmix or the bread may turn out dense.
  4. Gently fold in 1/2 cup chopped walnuts, 1/2 cup golden raisins, and 1/2 cup chopped dates until evenly distributed.
  5. Preheat the oven to 350°F (175°C) and grease three 6x3x2-inch mini-loaf foil pans.
  6. Divide the batter evenly among the three prepared pans, filling each about two-thirds full.
  7. Place the pans on a cookie sheet and bake in the preheated oven for 35 to 40 minutes, or until a cake tester inserted in the center comes out clean.
  8. Once baked, allow the mini-loaves to cool in the pans for 15 minutes before carefully removing them from the pans.
  9. Continue cooling the loaves on a wire rack. Serve with sweet whipped butter for a delightful treat.
