For those looking to swap ingredients, consider using coconut oil or a dairy-free butter alternative in place of regular butter. If strawberries are out of season, you could use frozen strawberries, just make sure to thaw and drain them first to avoid excess moisture. The recipe is also great for experimenting with different kinds of fruit, like blueberries or peaches, if you’re feeling adventurous.

Strawberry Brunch Cake Recipe
Ingredients
- 1/4 cup butter, melted
- 2 cups strawberries, hulled and sliced 1/4-inch thick
- 2 cups pancake mix
- 2 eggs, lightly beaten
- 1 cup milk
Instructions
- Preheat the oven to 350 degrees F.
- Pour the melted butter into the bottom of a 9-inch cake pan and use a brush or paper towel to coat the sides and bottom.
- Taste the strawberries; if they aren’t sweet enough, sprinkle 2 tablespoons of granulated sugar over the bottom of the pan.
- Line the bottom of the pan with strawberries, covering the entire surface, and scatter any remaining slices over the first layer if desired. Set aside.
- In a large bowl, stir together 2 cups of pancake mix, 2 lightly beaten eggs, and 1 cup of milk using a fork or whisk. Beat well until all lumps are gone.
- Pour the pancake mixture over the strawberries in the pan.
- Bake in the center of the oven for 30 to 35 minutes, or until the sides begin to pull away from the pan and the cake is a deep golden brown.
- Once baked, run a knife around the edge of the cake to loosen it, then invert it onto a flat plate.
- Dust the top with icing sugar before serving right away.
