Strawberry Bundt Cake With Lemon Glaze Drizzle is a delightful treat that combines the sweetness of strawberries with a zesty lemon glaze. Perfect for any occasion, the cake is simple to whip up, thanks to the use of a cake mix. Get ready to impress your friends and family with the delicious creation.

For those looking to customize the cake, you can substitute the Duncan Hines strawberry cake mix with another brand or even a homemade cake mix. If allergies are a concern, consider using egg substitutes and dairy-free sour cream. The fresh strawberries can be replaced with frozen ones, but ensure they’re thawed and drained well to avoid excess moisture in the batter. Sourcing high-quality lemon juice will enhance the glaze’s flavor.

Strawberry Bundt Cake With Lemon Glaze Drizzle (Uses Cake Mix) Recipe
Ingredients
- 1 (18 1/4 ounce) box strawberry cake mix (Duncan Hines Moist Deluxe)
- 1/3 cup vegetable oil
- 1 cup water
- 3 large eggs
- 2 tablespoons sour cream (heaping tablespoons)
- 2/3 cup strawberry (either fresh strawberries pulsed a few times with food processor or strawberry pie filling drained)
- 1 dash cooking spray (Bakers Joy works best)
- 1 3/4 cups powdered confectioners’ sugar (or 2 cups if thicker texture desired)
- 5 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 350 degrees.
- Spray a Bundt or tube pan with Bakers Joy. If you’re feeling adventurous, you could also spray two 8-inch pans for a layer cake.
- In a large bowl, blend together 1 (18 1/4 ounce) box of strawberry cake mix, 1/3 cup vegetable oil, 1 cup water, 3 large eggs, and 2 heaping tablespoons sour cream on low speed for 1 minute, then increase to medium-high speed for 2 minutes.
- Pulse the strawberries a few times in a food processor until they are chopped, making sure not to puree them. Stir the chopped strawberries into the batter by hand.
- Pour the batter into the prepared Bundt pan or round pans.
- Bake for 35-40 minutes for the Bundt pan (30 minutes for round pans) until a toothpick inserted in the center comes out clean.
- Remove from the oven and let the cake cool in the pan on a wire rack for 15 minutes before carefully removing it from the pan.
- Allow the cake to cool completely before glazing. To make the glaze, combine 1 3/4 cups powdered sugar and 5 tablespoons fresh lemon juice in a bowl, whisking until creamy, then drizzle it over the top and sides of the cake.
