To maintain the integrity of the flavors, fresh strawberries for pureeing are recommended, but frozen ones can work in a pinch. If you’re watching sugar intake, consider using a sugar substitute that measures like sugar. Those with dairy allergies might want to swap out the butter for a plant-based alternative and the powdered milk for a non-dairy version. Always check labels for cross-contamination if allergies are a concern.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1 1/4 cups pureed strawberries
  • 2 tablespoons powdered milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 3 large eggs
  • 3 drops red food coloring
  • 3 cups powdered sugar
  • 1/3 cup butter
  • 1 1/2 teaspoons vanilla
  • 2 – 3 tablespoons strawberry puree

Instructions

  1. Preheat the oven to 350 degrees. Prepare your pan of choice: one 13×9, two 9-inch rounds, three 8-inch rounds, or about 20 cupcakes by greasing and flouring them, or lining the cupcake pans with liners.
  2. In a large bowl, mix together 2 1/4 cups all-purpose flour, 1 1/2 cups sugar, 1/2 cup softened butter, 1 1/4 cups pureed strawberries, 2 tablespoons powdered milk, 3 1/2 teaspoons baking powder, 1 teaspoon salt, 1 teaspoon vanilla, 3 large eggs, and 3 drops of red food coloring until well blended.
  3. Pour the batter into the prepared pans, or fill the cupcake liners about 2/3 full.
  4. Bake: for the 13×9 pan for 35-40 minutes, for the 9-inch rounds for 25-30 minutes, for the 8-inch rounds for 30-35 minutes, and for cupcakes for 20-25 minutes. The cakes are done when a toothpick inserted comes out clean.
  5. While the cakes are baking, prepare the frosting by beating together 3 cups powdered sugar, 1/3 cup butter, 1 1/2 teaspoons vanilla, and 2-3 tablespoons strawberry puree in a separate bowl until smooth and creamy.
  6. Once baked, let the cakes cool completely, which may take up to one hour. You can cool them in the pan or transfer them to a wire rack. Then frost the cakes generously and enjoy.
