When it comes to ingredients, fresh strawberries and rhubarb really shine in the recipe. If you can’t find rhubarb or prefer a sweeter note, feel free to substitute it with additional strawberries or try other fruits like peaches. If you have dietary restrictions, a dairy-free margarine can easily replace butter, and a gluten-free cake mix is available for those who need it. Always double-check labels for allergens if you’re serving guests.

Ingredients

  • 1/4 cup butter or 1/4 cup margarine
  • 1 cup brown sugar, packed
  • 2 cups fresh strawberries, sliced
  • 2 cups fresh rhubarb, chopped
  • 1 (19 ounce) box French vanilla cake mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs

Instructions

  1. Preheat the oven to 350F, or to 325F if using dark non-stick pans.
  2. Melt 1/4 cup butter in a rectangular 9 x 13 inch pan placed in the oven.
  3. Sprinkle 1 cup brown sugar evenly over the melted butter.
  4. Arrange 2 cups of sliced strawberries and 2 cups of chopped rhubarb on the brown sugar, pressing them in gently to ensure they stick.
  5. In a mixing bowl, combine 1 (19 ounce) box of French vanilla cake mix, 1 1/4 cups water, 1/3 cup vegetable oil, and 3 eggs. Beat until the mixture is smooth and well-combined.
  6. Pour the batter over the arranged strawberries and rhubarb in the pan.
  7. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once baked, remove the cake from the oven and run a knife around the edges to loosen it from the sides of the pan.
  9. Carefully turn the pan upside down onto a heatproof serving plate, and let it sit for 1 minute so the brown sugar topping can drizzle down over the cake.
  10. Allow the cake to cool for 30 minutes before serving, warm or cooled, with a dollop of whipped cream on top. Store any leftovers loosely covered.
