If you’re in the mood for a delightful dessert, the Toffee Bar Coffee Cake is just the treat to brighten your day. With its rich layers of chocolate-covered toffee and crunchy pecans, the cake pairs perfectly with your morning coffee or an afternoon cup of tea.

When making the Toffee Bar Coffee Cake, feel free to substitute the buttermilk with regular milk if you don’t have any on hand, although the buttermilk does provide a nice tang. If you’re looking to reduce sugar, consider using a sugar substitute for the brown and white sugars, but remember that it might slightly change the texture. For nut allergies, the pecans can be omitted or replaced with seeds to keep that delightful crunch in the cake.

Toffee Bar Coffee Cake Recipe
Ingredients
- 2 cups all-purpose flour
- 1 cup packed dark brown sugar
- 1/2 cup sugar
- 1/2 cup unsalted butter, room temperature
- 1/2 teaspoon salt
- 4 (1 1/2 ounce) chocolate-covered English toffee bars, chopped (about 1 cup)
- 1 cup chopped pecans
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and butter a 13x9x2-inch glass baking dish, setting it aside for later.
- In a large bowl, beat together 2 cups all-purpose flour, 1 cup packed dark brown sugar, 1/2 cup sugar, 1/2 cup unsalted butter, and 1/2 teaspoon salt on low speed until the mixture resembles coarse meal.
- Transfer 1/2 cup of the butter-sugar mixture to a medium bowl and mix in the chopped chocolate-covered toffee bars and 1 cup chopped pecans. Set the mixture aside for topping.
- Stir 1 teaspoon baking soda into the remaining butter-sugar mixture in the large bowl. Then add 1 cup buttermilk, 1 large egg, and 1 teaspoon vanilla extract, beating until just combined.
- Pour the batter into the prepared baking dish, smoothing it out evenly.
- Sprinkle the toffee topping evenly over the batter in the dish.
- Bake for about 35 minutes, or until the topping is golden brown and a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool completely in the dish before cutting it into 16 squares. You can also make it a day ahead and store it in an airtight container at room temperature.
