For those with dietary restrictions, whole wheat flour can be substituted with a gluten-free flour blend, and powdered milk can be replaced with a non-dairy alternative. Fresh herbs can certainly make a lovely addition if you have them on hand, enhancing the flavors even more. Just remember to adjust the quantity as fresh herbs are more potent than dried ones, and be cautious with the salt if you’re watching sodium intake.

Serving Size1 (57 g)

Ingredients

  • 5 cups whole wheat flour
  • 1 tablespoon sea salt
  • 1/3 cup brown sugar
  • 1/2 cup powdered milk
  • 1 teaspoon basil
  • 1/2 teaspoon sage
  • 1/2 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 1/2 cups warm water
  • 2 tablespoons dry red wine

Instructions

  1. Preheat the oven to 500°F.
  2. In a large bowl, mix 5 cups of whole wheat flour, 1 tablespoon of sea salt, 1/3 cup of brown sugar, 1/2 cup of powdered milk, 1 teaspoon of basil, 1/2 teaspoon of sage, 1/2 teaspoon of thyme, and 1 teaspoon of garlic powder until well blended.
  3. Add 1 1/2 cups of warm water and 2 tablespoons of dry red wine to the dry ingredients. Mix gently until everything is just moistened; no need for heavy kneading.
  4. Cover the dough with a clean towel and let it rest for 10 minutes at room temperature. The little break is crucial for the flavors to mingle.
  5. Pinch off balls about 2 inches in diameter and roll them to smooth out.
  6. Once all the balls are formed, roll each one into a 5-inch circle, aiming for a thickness similar to a pie crust.
  7. Place each round on a pizza tray and bake on the lowest rack of the oven for about 3 minutes. Watch them closely; they should bubble up slightly and turn a lovely shade of brown. Avoid overbaking to keep them tender.
  8. Store any leftovers in the refrigerator or freeze them in small batches, as the treats have a short shelf life due to their lack of leavening and preservatives.
