The Upside Down Ginger Apple Coffee Cake (Clean Eating) is a delightful way to enjoy the flavors of ginger and apple in a wholesome dessert. With wholesome ingredients and a touch of sweetness, the cake is perfect for any occasion, combining a lovely warm flavor with a moist texture that makes it irresistible.

If you’re looking for substitutions, spelt flour can easily be replaced with whole wheat flour for a similar effect. For a gluten-free version, a gluten-free flour blend works quite well. Granny Smith apples add a nice tartness, but any tart apple will do. Keep in mind that the recipe contains dairy and eggs, so those with allergies or specific dietary restrictions should consider alternatives like plant-based yogurt or an egg replacer.

- 2 cups spelt flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup canola oil
- 1 egg
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1/2 cup unsweetened applesauce
- 1 cup plain yogurt
- 2 tablespoons ginger, grated fresh
Instructions
- Preheat the oven to 350°F and coat an 8-inch cake pan with cooking spray.
- Drizzle 2 tablespoons of maple syrup in the bottom of the pan, swirling it to coat evenly.
- Arrange the apple slices over the syrup in a single layer, allowing them to overlap slightly and fully cover the pan. Set aside.
- In a medium bowl, sift together 2 cups of spelt flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, and 1/2 teaspoon of salt. Set the mix aside.
- In a large bowl, use an electric mixer to beat together 1/4 cup of canola oil, 1/4 cup of brown sugar, 1/4 cup of sugar, 1 egg, 1/2 cup of unsweetened applesauce, 1 cup of plain yogurt, and 2 tablespoons of grated fresh ginger until smooth and well combined.
- Add the flour mixture to the wet ingredients, beating until just combined; be careful not to overmix.
- Pour the batter over the arranged apple slices in the pan, smoothing the top gently with a spatula.
- Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 20 minutes on a wire rack before inverting it onto a serving platter. Drizzle with additional maple syrup if desired.
