When it comes to substitutions, feel free to swap butter for margarine, depending on dietary preferences or availability. For a nut-free version, simply omit the walnuts or replace them with sunflower seeds for a similar crunch. Be mindful of allergies, especially with eggs and nuts, and ensure you’re using high-quality chocolate for the richest flavor.

Ingredients

  • 3 eggs, separated
  • 1/4 teaspoon cream of tartar
  • 3/4 cup butter or 3/4 cup margarine, softened
  • 1 1/2 cups sugar
  • 1 teaspoon instant coffee
  • 3 unsweetened chocolate squares, melted, cooled
  • 1 teaspoon vanilla
  • 1/2 cup all-purpose flour
  • 1 dash salt
  • 2 tablespoons hot water
  • 1 cup walnuts, coarsely chopped
  • powdered sugar

Instructions

  1. Preheat your oven to 350°F. Line a 13×9-inch pan with foil, making sure to grease the bottom only.
  2. In a small bowl, whip 3 egg whites, 1/4 teaspoon cream of tartar, and a dash of salt until stiff peaks form. Set the aside for later.
  3. In a larger bowl using the same beaters, cream together 3/4 cup of softened butter until fluffy. Gradually add in 1 1/2 cups of sugar, mixing well.
  4. Add the egg yolks one at a time, mixing thoroughly after each addition.
  5. In a separate small bowl, dissolve 1 teaspoon of instant coffee in 2 tablespoons of hot water. Add the mixture, along with the melted and cooled 3 unsweetened chocolate squares and 1 teaspoon of vanilla, to the butter mixture and blend until well combined.
  6. Lightly spoon 1/2 cup of all-purpose flour into a measuring cup and level it off. Add the flour to the mixture and mix until just combined. Stir in the coarsely chopped 1 cup of walnuts.
  7. Gently fold in the beaten egg whites until everything is just combined. You want to maintain that airy texture.
  8. Spread the brownie batter evenly into the prepared pan, smoothing the top with a spatula.
  9. Bake in the preheated oven for 30 to 35 minutes, or until the brownies are set but be careful not to overbake them. When done, allow the brownies to cool completely in the pan.
  10. To serve, sprinkle with powdered sugar and carefully lift the brownies out using the foil lining. Cut them into bars and enjoy.

For a delightful twist on traditional brownies, I highly recommend trying the Weight Watchers Brownie Crunch. The combination of light cream cheese and crispy rice cereal gives it a unique texture that complements the rich chocolate flavor beautifully.
