Weight Watchers Brownie Crunch is a delightful way to satisfy your chocolate cravings while keeping an eye on those points. The brownies manage to be rich and satisfying, featuring a crispy topping that adds a fun crunch to each bite. Perfect for anyone looking to indulge without the guilt.

When making Weight Watchers Brownie Crunch, consider using gluten-free flour if there are gluten sensitivities in your household. For those watching their dairy intake, a dairy-free cream cheese can work as a substitute. The crispy rice cereal provides a wonderful crunch, but if you’re looking for an alternative, consider using crushed nuts or granola for a different texture. Always check the labels for any allergens if you’re serving to guests.

Weight Watchers Brownie Crunch Recipe
Ingredients
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon table salt
- 5 tablespoons unsweetened cocoa
- 1 cup granulated sugar
- 1/2 cup light cream cheese, softened
- 2 large eggs, divided into yolks and whites
- 1 teaspoon vanilla extract
- 1/2 cup crispy rice cereal
- 2 tablespoons powdered sugar
- 1 tablespoon butter, melted
Instructions
- Preheat your oven to 350°F. Line the bottom and sides of a 9- X 9-inch baking pan with two sheets of nonstick aluminum foil or use regular foil coated with cooking spray.
- In a medium bowl, sift together 3/4 cup all-purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon salt, and 5 tablespoons unsweetened cocoa.
- In a large bowl, cream 1 cup granulated sugar with 1/2 cup softened light cream cheese until light and fluffy. Add the egg yolks, one at a time, mixing well after each addition, then stir in 1 teaspoon vanilla extract.
- Gradually blend the flour mixture into the cream cheese mixture until just combined.
- In a separate bowl, whisk the 2 egg whites until soft peaks form. Gently fold the egg whites into the brownie mixture, ensuring not to deflate the whipped egg whites. Spread the brownie batter evenly in the prepared pan.
- In a small bowl, mix together 1/2 cup crispy rice cereal, 2 tablespoons powdered sugar, and 1 tablespoon melted butter. Sprinkle the mixture over the brownie batter.
- Place the pan on the middle rack of the oven and bake for about 25 to 30 minutes, or until the center of the brownies sets. Allow to cool completely before cutting into 12 pieces.
