For a richer flavor, consider using regular cream cheese instead of fat-free, though that will increase the calorie count. If you’re looking for a gluten-free option, swap the all-purpose flour for a gluten-free blend. Fresh key limes provide the best flavor, but if they are unavailable, regular limes can be used as a substitute.

  • 3 tablespoons margarine, softened
  • 3 tablespoons fat free cream cheese
  • 1 1/2 cups sugar
  • 1 large egg yolk
  • 3/4 all-purpose flour
  • 2 tablespoons all-purpose flour
  • 3 tablespoons powdered sugar
  • 1 large egg
  • 1/4 cup fat free egg substitute
  • 1/3 cup fresh lime juice, from key limes

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Coat an 8-inch square baking dish with cooking spray to prevent sticking.
  3. For the crust, beat together 3 tablespoons of softened margarine, 3 tablespoons of fat-free cream cheese, and 1/2 cup of sugar with an electric mixer until the mixture becomes light and fluffy.
  4. Add 1 large egg yolk and gradually mix in 3/4 cup of all-purpose flour until combined.
  5. Spread the crust mixture evenly into the prepared baking dish using your hands. To avoid sticking, coat your hands with 1 tablespoon of powdered sugar.
  6. Bake in the preheated oven for about 15 minutes, or until the crust is lightly browned.
  7. While the crust bakes, prepare the filling by beating 1 large egg and 1/4 cup of fat-free egg substitute in the same bowl used for the crust.
  8. Add the remaining 1 cup of sugar and 2 tablespoons of all-purpose flour to the egg mixture, then beat on low speed until everything is well blended.
  9. Stir in 1/3 cup of fresh lime juice and continue to beat on low until combined.
  10. Once the crust is ready, pour the lime filling into the warm crust and bake for an additional 15 minutes.
  11. After baking, allow the bars to cool completely and sprinkle with 2 tablespoons of powdered sugar before slicing into squares.
