Yeasted Waffles are a delightful twist on your traditional breakfast choice, offering a light and airy texture that elevates any morning. The recipe combines the magic of yeast with a simple batter, making every bite a treat you won’t forget.

For those looking to make substitutions, whole milk can be used in place of skim for a richer flavor, while dairy-free users might opt for almond or oat milk. Be cautious with the butter; for a non-dairy alternative, vegan butter works well. Ensure the flour is unbleached to maintain the intended texture, and watch out for any allergies related to eggs or gluten if you’re serving guests.

Yeasted Waffles Recipe
Ingredients
- 1 3/4 cups skim milk
- 8 tablespoons butter, cut into 8 pieces
- 2 cups unbleached all-purpose flour (10 oz)
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 1/2 teaspoons instant yeast
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Heat 1 3/4 cups skim milk and 8 tablespoons butter in a small saucepan over medium-low heat until the butter is melted, which takes about 3-5 minutes. Allow the mixture to cool until it feels warm to the touch.
- In a large bowl, whisk together 2 cups unbleached all-purpose flour, 1 tablespoon sugar, 1 teaspoon salt, and 1 1/2 teaspoons instant yeast until well mixed.
- Gradually whisk the warm milk and butter mixture into the flour until the batter is smooth and combined.
- In a small bowl, whisk 2 large eggs and 1 teaspoon vanilla extract until blended. Add the egg mixture to the batter and whisk until thoroughly incorporated. Don’t forget to scrape down the sides of the bowl with a rubber spatula to ensure everything is mixed well.
- Cover the bowl tightly with plastic wrap and refrigerate the batter for at least 12 hours, but not more than 24 hours, to let those flavors develop.
- When ready to cook, heat the waffle iron according to the manufacturer’s instructions. Take the batter out of the fridge, and give it a good whisk to recombine, as it will deflate a bit during chilling.
- Bake the waffles according to the directions of your specific waffle iron. Serve them immediately for the best texture, or place them on a wire rack set on a baking sheet, cover with a clean kitchen towel, and keep them warm in a 200-degree oven. When the last waffle is baking, remove the towel to allow the waffles to crisp up for a few minutes.
