Zucchini Bread recipe

When preparing Zucchini Bread, consider using fresh zucchini or even frozen, as long as it’s been grated and properly measured. For a healthier take, substituting part of the all-purpose flour with whole wheat flour can be delightful, and brown sugar could lend a richer flavor. If allergies are a concern, it’s wise to verify the margarine and any other ingredients used.

Serving Size1 (150 g)

Ingredients

  • 1 cup margarine, melted (two sticks 70% fat)
  • 2 cups white sugar
  • 3 eggs
  • 3 teaspoons vanilla, liquid
  • 1 teaspoon cardamom
  • 3 cups flour
  • 2 cups zucchini, grated squash seeds and rind
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup margarine
  • 1/4 cup flour

Instructions

  1. Preheat the oven to 350°F.
  2. Choose margarine that is the old style, 70% fat, which is great for baking. If you prefer, you can substitute one stick of butter, but be sure to use a non-butter option like Crisco to grease the pan.
  3. In a large mixing bowl, combine 1 cup of melted margarine, 2 cups of white sugar, 3 eggs, and 3 teaspoons of liquid vanilla. Mix until well blended.
  4. Add in 1 teaspoon of cardamom, 3 cups of flour, 2 cups of grated zucchini, 1/4 teaspoon of baking powder, and 1 teaspoon of baking soda. Stir until just combined; be careful not to overmix.
  5. Grease and flour your pan to prevent sticking. You can use an 11 1/2 inch black cast iron pan, gift pans, or two loaf pans, depending on what you have handy.
  6. Pour the batter into the prepared pan and bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  7. For personal touches, consider adding grated nuts like pecans, increasing the cardamom, or using real butter for one of the sticks of margarine. If you can, opt for high-quality Mexican vanilla for a richer flavor.
